Do You Have the Real Thing? (The 3-Step Label Check)
Before you open the jar, look for these three non-negotiable markers. If your honey is missing any of these, it may not be authentic export-grade Manuka.

1. Check the Origin: It must say "Made in New Zealand" or "Product of New Zealand" to ensure it is authentic and originated within New Zealand.

2. Check the Grading: Look for the UMF™ (Unique Manuka Factor) quality mark. This is the only independent grading system that verifies the honey’s signature compounds (Leptosperin) and quality.

3. Check the Traceability: Every authentic jar has a unique digital footprint. All honey products should have a batch number. With our products you can scan the QR code on the lid and type in the Batch code from the Label into our website. This allows you to see and download a copy of the independent UMFHA release certificate for this product. These certificates are only issued to UMFHA members once extensive testing is complete.

The "Spoon Test": Visual & Texture Differences

While lab tests prove the chemistry, your eyes can often spot the quality. Authentic Manuka honey has unique physical properties known as thixotropy.

Real Manuka Honey: Is viscous, creamy, and gel-like. It resists dripping and sits high on the spoon until it is stirred or agitated.

Decoding the Numbers: UMF™ vs. MGO
One of the most confusing aspects of buying Manuka honey is the difference between MGO and UMF.

The Official Government Standard (MPI)
In 2017, the New Zealand Ministry for Primary Industries (MPI) finalized a robust scientific definition for Manuka honey. To be legally exported as "Manuka," the honey must pass five strict lab tests.

Beyond the Standard: The Art of Cellaring

Passing the test is just the minimum. At Manuka South, we treat our honey like fine wine.
Raw Manuka honey requires time for the natural DHA (Dihydroxyacetone) from the flower nectar to convert into the potent MGO. While many producers heat their honey to speed this up (which damages the nutrients), we use a traditional Cellaring Process.
We age our honey in temperature-controlled facilities for up to two years, allowing the potency to mature naturally. This results in a smoother texture, richer complexity, and the highest possible bio-activity without heat damage.
